How can you make colored text, I cant use the character &, if you dont know waht im saying, look at this picture, see USA? How do they do that D:

I don't believe that World of Minecraft Realms has the colored text feature but on servers like MCLawl you can put a % and after the percentage sign put a number between 0-9 or a letter between a-f.
So if you wanted colored text like the one shown in the picture you posted, you would type this:
%fU%4S%1A
