Have claimed land with a golden shovel. Went away and come back. I had a pond of water on my land but it now all gone. Did it vaporise in to thin air? How can I get my water back without having to spend a lot of time going back and forth with a bucket?

I'm not sure what could have happened there, but try making a few infinite pools hidden around your place, maybe one underground or in a hidden compartment, so that if someone does take it, you can easily replace it.

No, haven't abandoned the claim at any point nor was anybody else trusted at the time.
Guess it Mr. Buquet time, unless there another way. How do I make an infinite pool? Is there a water block?

An infinite water pool is a 2x2 sqaure of water..
Put some water in opposite corners.
And the method has been around since Alpha so I doubt you have to worry about an update breaking it

Well, found out what had happen to my water. Thought I'd fill the hole up with dirt but first to clear away some cobblestones and accidentally dug an earth block. Found stairs in to a mine, somebody dug up and got wet! The stairs must have been made before the land claim. Down I go and found my water way down. Ha, can you image some booby going up and down all those stairs to get his water back? Year that will happen.

Did you abandoned the claim at any point? And was anyone else trusted on that claim?I think you will have to get a few buckets of water and make an infinite pool to fill up what is missing.
